Zucchini Recipes

So lately I have been on a squash and zucchini kick. My sister in law and mother in law gave me a bunch of squash and zucchini from their gardens, so I found some yummy recipes that I could make with it! I love all 3 of these recipes.. Especially the casserole. My Hubby loved it! Enjoy! -Julie


Zucchini Casserole

Cook 5 minutes and drain:
6 c. sliced squash/zucchini (I mix zucchini and yellow squash)
½ c. chopped onion

Add:
1 can cream of chicken
1 c. sr. cream
1 c. grated carrots
½ tsp. salt
1 lb. hamburger (optional)

Melt:
½ tsp. butter w/
1 pkg. stove top dressing.  (I usually just moisten the dressing w/ a little water instead of butter???)


Spread squash mix into a 9x13 pan and pour dressing over top.
Bake 350 degrees for 25-30 mins.


Zucchini Cookies-

Cream:                                                         Add: (dry ingredients)
½ c. shortening                                             1 tsp. baking powder
½ c. sugar                                                     ½ tsp. baking soda
1 c. brown sugar                                           1 tsp. cinnamon
                                                                   ½ tsp. salt
Add:                                                            3 ½ c. flour
2 eggs                                                         1 c. nuts (opt.)
1 tsp. vanilla                                                 1 c. chocolate chips (or more!!!)

Stir In:
3 c. grated zucchini

Chocolate Zucchini Cake
Mix:
½ c. margarine/butter
½ c. oil (or apple sauce)
1 ¾ c. sugar
2 eggs
1 tsp. vanilla
½ c. sour milk (equal parts milk and lemon juice…do first in separate dish and let stand)
2 ½ c. flour
4 Tbsp. cocoa
½ tsp. cinnamon
1 tsp. soda
½ tsp. salt
2 c. grated zucchini

Top with ½ c. chocolate chips (or more!!!)
Bake in a 9x13 pan @ 325 degrees for 45-50 mins.
Optional: can frost or sprinkle with powder sugar or leave plain.

Frosted Pumpkin Cookies

I  love this time of year because I love pumpkin everything! These cookies kinda remind me of an easy pumpkin roll, they are so moist and the cream cheese frosting just tops it off! So if your not in the mood for pumpkin chocolate chip cookies try these for something different...they are "Deeeelicious" as Kooper would say!

Mix Together:
1/2 c. Butter
1/2 c. Butter shortening
2 eggs
1 c. Pumpkin
1 c. Sugar

Then Add:
1 tsp. Baking Soda
1/4 tsp. Salt
2 tsp. Cinnimon
2 c. Flour

Mix well, dough will be sticky. Drop by large tablespoons on cookie sheet lined with parchment paper. Bake at 375 degrees for 10-12 min. When cooled frost with cream cheese frosting.

Frosting:
3oz cream cheese softened
1/4 c. Butter
1 tsp. Vanilla
2 c powdered sugar

Cheesy Potatoe Soup....

*You can make this 2 ways- crock pot or stove top (I prefer to do slow cook crock pot)*

Ingredients:
6-9 medium Potatoes- skinned and cubed
4 celery stalks
4-5 Long carrots, (I wouldn’t do baby carrots, I like the long carrots that you skin and cut)
1 can corn- drained
1/2 pound polish sausage- (k think outside the box. I normally don’t love sausage but it totally makes it!)
2 cans chicken broth
8-10 cubes boillan chicken broth cubes
1 ½ c. Milk (I used Vitamin D milk, makes it creamier)
Cheddar cheese- about 2 cups
Garlic Salt
Onion flakes
Salt
pepper

Directions: Skin potatoes and then cube, skin carrots and cut into bite size pieces, cut celery into bite size pieces. Put everything into crock pot. Pour your cans of chicken broth in. Then fill crock pot with water so it’s just barely covering the vegetables. (if you are using boullian cubes just fill with water, and put about 10-15 cubes in). I like to use the cans and cubes. Cook on low for 5-6 hours or high for 4-5 hours. Don’t over cook your potatoes or vegetables.
About an hour before serving & when your potatoes are almost done, brown your sausage. Put sausage, corn, cheese and milk into crock pot. Salt and pepper to taste. You can also add more onions, boullian cubes, onions or parsley to taste.

Banana Bread....



So to kick things off I am going to share one of my hubbys favorite things I make for him. My killer banana bread!! Actually let me re-phrase that. Its actually my moms recipe. But dont you feel like when you start making it so much, at what point can you start claiming it as "my recipe". well I think now..

So here it is...

Julie's Banana Bread-

Sift together in a bowl: if you have a bosch mixer i recommend using it! So easy....
2 1/2 C. Flour
1 2/3 C. Sugar
1 1/4 tsp. Baking soda
1 1/4 tsp. Baking Powder
1 tsp. Salt

Add:
2/3 C. Cristco (I like to use butter flavor crisco)
1/4 C. Mashed bananas (3)
1/3 C. Buttermilk
Beat for 2 minutes.
Add:
1/3 C. More Buttermilk  
2 Lg. Eggs
Beat 2 more minutes (add 2/3 cups chopped wal nuts -optional)
Pour into greased bread pans, mini loafs, or bundt pan. Make sure to only fill half way.
Bake at 350* 35-45 minutes or until done

Serve warm with milk! Actually I really dont like to drink milk but it sounded good. Happy Cooking!!
